Dip-fishing is a wonderful behavior to watch but what you can't see may be even more amazing. Parts of this happen so quickly that they are impossible to see without slow motion or high-speed photography. First the egret flies over the water, dipping its feet into the surface. This disturbs the fish and some swim ahead of the egret. The egret swims after them and if it can, it strikes for the fish in mid-flight. But now the head is in the water and stops moving forward, and the egret's body is in flight so it keeps moving. The egret, hopefully with a fish, has its head underneath it and it lifts it out of the water and snaps it back into place. Then it continues fishing. The next photos I am going to post show this awesome behavior in detail.
