Started another slow brew batch of apple butter- basically you slow cook applesauce, and cookout the moisture. I had made a first batch of lumpy applesauce with the peels left on, and they did not break down, so I figure this way they will be assimilated. A key for this (which forgot for the first 2 hours) is propping the lid up in something like kebob sticks- you want to allow moisture to escape out of the pot. Last time it took about 36 hours...
